The ingredients needed to make Ramadan Special - Eggless Semolina Cake:
  1. Make ready 1 cup semolina (sooji)
  2. Take pinch salt
  3. Prepare 1/4 tsp. cardamom powder
  4. Get 1/2 cup castor sugar
  5. Prepare 1/3 cup melted butter / oil
  6. Take 1/2 cup yoghurt
  7. Prepare 1/2 cup milk
  8. Take 1 tbsp. pistachios, sliced or any dry fruits
  9. Prepare 1 tbsp. cherries, chopped
  10. Prepare pinch saffron
  11. Make ready 1/2 tsp. baking powder
  12. Prepare 1/4 tsp. baking soda
  13. Prepare oil to grease the cake pan
  14. Take some extra cherries & pistachios to garnish

Instructions to make Ramadan Special - Eggless Semolina Cake:
  1. In a bowl mix together semolina, salt, cardamom powder
  2. And sugar.
  3. Then add in the butter,
  4. Followed by the yoghurt.
  5. And milk. Combine everything well & leave aside for 15-20 minutes.
  6. Lastly add in the pistachios, cherries,
  7. Baking powder, saffron & baking soda.
  8. Mix well and pour into a greased cake tin. (I used a disposable cake tin).
  9. Bake in a microwave oven in the convection mode at 180 degrees C. for 30-35 minutes.
  10. Set aside to cool down.
  11. Garnish with sliced cherries & pistachios. Then cut into desired shapes and enjoy as an after-meal dessert. For more variation, it can be served with a drizzle of some rabri over it.
