The ingredients needed to make Crispy Pata:
  1. Get 2 liter cooking oil
  2. Prepare 2 medium pork thigh or pata
  3. Prepare 1 head garlic crushed
  4. Get 3 tbsp salt
  5. Make ready 1 tsp ground whole black pepper
  6. Get 2 bay leaf
  7. Take 2 onions sliced
  8. Take 4 liter water for boiling

Crispy Pata made whole pork leg boiled until tender and then deep-fried until golden and crisp. Crunchy on the outside and moist on the inside, this popular Filipino delicacy is sinfully delicious! Crispy Pata dish is deep fried pork legs, Pata means Pork Feet in Spanish. Instructions to make Crispy Pata:
  1. In a large pot, put all ingredients except cooking oil and boil until pork is fork tender that is at least 45 mins, adding water if needed.
  2. Drain the pork and let cool. Put in the fridge if possible.
  3. In a deep fryer, heat the cooking oil until very hot.
  4. Deep fry the pork thigh one at a time until it turns beautifully brown and blisters have appeared on the pork skin.
  5. Drain on paper towels and serve with steamed rice and your favourite sauce.
