Steps to make Patatas Bravas:
  1. Peel the potatoes, and boil them starting with cold water until just fork-tender. Discard water and cut the potatoes into bite-sized pieces. Set them aside to cool and pre-heat your oven to 375 degrees.
  2. When cool, toss the potatoes with the salt, pepper and olive oil. Spread them on a baking sheet and bake for 10-15 minutes or until the edges turn golden brown. You may flip them halfway through cooking to achieve even coloring and crispness.
  3. While the potatoes are baking, use a mortar and pestle or food processor to finely mince the garlic for the Aioli. Stir in the mayonnaise, mustard and paprika. Drizzle in the olive oil and stir continuously/process until you have reached a thick-sauce consistency. Season with salt and pepper.
  4. In a thick-bottom sauce pan, heat the olive oil for the Tomato Sauce over medium heat. Saute the garlic and onions until soft and fragrant. Add all the spices and pepper sauce until completely incorporated, then pour in the tomatoes.
  5. Lower the heat, and simmer for 10 minutes. Season with salt and pepper.
  6. Using a food processor or blender, puree the Tomato Sauce until smooth. You can do this in batches if you have a small appliance.
