Instructions to make Spiced Roast Chicken:
  1. Preheat oven to 200’C.
  2. Place chicken in a oven / roasting dish, breast side up.
  3. Loosen the skin over the chicken breast. Be careful not to tear the skin.
  4. Combine all ingredients for the marinade and mix well.
  5. Brush the marinade over the chicken and under the skin over the breasts.
  6. Roast for 20 minutes at 200’C.
  7. Turn the heat to 180’C and roast for another 30 minutes (or till cooked through).
