  5. Prepare 1/4 cup Brown sugar
  6. Prepare 3 Minced garlic cloves
  7. Take 1 tsp Onion salt
  8. Get 1/2 tsp Ground mustard
  9. Prepare 1 large onion thinly sliced
  10. Make ready 1 Salt and pepper to taste

Steps to make Sweet and Caramelized Roast Chicken:
  1. Unwrap and wash chicken and pat dry. Trim tail end if desired and remove giblets.
  2. Preheat oven to 375•
  3. In medium sized bowl mix all the ingredients.
  4. Rub the bottom of chicken with mixture and put in baking pan. Pour the remaining mixture over chicken and in cavity.
  5. Lay onion slices on top of chicken and in cavity. Cover wing tips after a while so they don't burn too bad.
  6. Place in oven and cook 1 1/2 to 2 hours, basting numerous times while cooking. Check with thermometer to 180• in thickest part of chicken. The sauce should caramelize and form a glaze.
  7. Put the broiler on for a few minutes to make the skin crispy.
  8. Let rest 10 minutes before carving.
  9. Add a little flour or corn starch to make a little gravy.
