Instructions to make Jacket Sweet Potato and Tuna:
  1. Preheat oven to 180° C.
  2. Pierce sweet potatoes with a knife or a fork. Rub the potatoes with oil and salt and pepper. Bake for 1 hour for medium size or 1.5 hours for large size.
  3. In a bowl, combine all ingredients for tuna and refrigerate till serving.
  4. To serve. Cut the sweet potatoes in half or a cross. Add a tspn of butter on each potato. Top with tuna and cheese.
  5. Serve with roasted tomatoes and cucumber.
