The ingredients needed to make Pressure Cooker Chili:
  1. Get 3 lb stew meat - beef, pork, and/or lamb
  2. Prepare 2 tsp peanut oil
  3. Make ready 1 1/2 tsp kosher salt
  4. Take 2 chipotle peppers canned in adobo sauce, chopped
  5. Get 1 (16 ounce) container chunky salsa
  6. Get 30 corn tortilla chips
  7. Get 1 tbsp chili powder
  8. Make ready 1 tbsp adobo sauce from canned chipotle peppers
  9. Make ready 1 tbsp tomato paste
  10. Get 1 tsp ground cumin
  11. Take 1 (12 ounce) bottle beer, med ale
  12. Prepare 2 can kidney beans undrained

Steps to make Pressure Cooker Chili:
  1. Place the meat in a large mixing bowl and toss with peanut oil and salt.
  2. Heat a 6 quart heavy bottomed pressure cooker over high heat until hot. Add the meat in 3-4 batches and brown on all sides, about 2 mins per batch. Once each batch is browned transfer to a clean bowl.
  3. Once the meat is cooked, add the beer to deglaze the pot.
  4. Scrape the browned bits from the bottom of the pot. Add the meat back to the pressure cooker along with the salsa, chips, peppers, sauce, paste, spices and beans. Stir to combine. Lock the lid in place according to instructions. When the steam begins to hiss out of the cooker (about 5 mins), reduce heat to low and cook 25 mins. Remove from the heat and carefully release the steam. Serve immediately.
  5. Top with your favorite toppings - cheese, sour cream. avocado, onions, etc.
