  1. Make ready 1 cup Jowar /shorgum flour finely ground and seived
  2. Make ready 1/2 cup fine multigrain wheat flour
  3. Take to taste Salt
  4. Prepare 1 Tb ajwain/carom seeds
  5. Make ready Oil for deep frying
  6. Take 1 ts asafoetida powder
  7. Get Water as needed for kneading
  8. Get 1 Tb oil for kneading

Steps to make Jowar-Wheat Nimkis:
  1. Mix all the ingredients well in a mixing bowl except water
  2. Keep adding water slowly to knead a stiff dough
  3. Rest the dough covered for 15 minutes
  4. Take small portions of the dough and roll them into thin Long strips (roll in between your palms by greasing them with oil first)
  5. Then gently place the rolled strip on a flat surface or plate and roll into a concentric circle like shown in the image
  6. Prepare all the Nimkis similarly
  7. Meanwhile place a wok filled with enough oil for deep frying on the stove and let the oil heat on medium-Low heat
  8. After the Nimkis are done, check if the oil has heated enough and start to deep fry the Nimkis in batches
  9. Try not to overcrowd the wok and deep fry each till golden brown and crisp
  10. Strain excess oil from the fried Nimkis by placing them on a kitchen tissue
  11. Cool and Store airtight till consumption
